Filling, hearty and healthy, this butter chicken is easy to make and a much healthier option than what you would get at your local restaurant!
Ingredients
1 tbsp unsalted butter
450 g roughly chopped chicken thigh
1 finely diced onion
1 crushed garlic clove
2 tsp grated ginger
1 tsp cumin
2 tsp garam masala
½ tsp cardamom
1 tbsp coriander
1 tin diced tomato
3/4 cup chicken stock
½ cup Greek yogurt
1/4 cup low fat cream
2 cups steamed rice
Heat a pan and add half your stick of butter and let it melt.
Add chicken and onions and let them brown. Set aside once they have browned.
Lower the heat and add in your ginger, garlic, cumin, garam masala, cardamom, and coriander.
Cook for 2 minutes and then add your chicken back into the pot with the diced tomatoes and chicken stock. Bring to a boil.
Reduce heat and add yogurt and cream, letting the mixture simmer.
Serve with rice to your kids and watch them enjoy their meal!
