This dish will take about an hour to complete. You can easily store this in your fridge to have again over the week. The recipe calls for the use of cauliflower, fennel seeds, smoked paprika, olive oil, red onion, peppers, garlic, lemon juice, yogurt, and cooked quinoa.

For this to work out perfectly, you need to boil the cauliflower for 5 minutes till it’s a little soft. Transfer it to a baking tray, along with all the other vegetables and seasoning in the next step. Then, leave them to cook in the oven for about 35 minutes.

All you have to do next is mix up the quinoa, seasonings, and the cooked vegetables in a large bowl, and it’s ready.

2. Carrot Zaalouk Salad

If you’re looking to add a Moroccan touch to your lunch, then this carrot Zaalouk salad is like no other. All you need is an instant pot where you can add in all the ingredients and leave it to cook for 10 minutes, and you’re good to go.

For this, you’ll need carrots, garlic, olive oil, lemon juice, cilantro, parsley, salt, paprika, cumin, cayenne pepper, and water. Add all of the ingredients into the instant pot and wait for them all to soften. After ten minutes, take out the mix from the pot, and use a masher to mix everything. Season with cilantro, parsley, and lemon at the end for added flavor.

You can eat this cold during your lunch break and not worry about having to heat it. Pair it up with gluten-free bread or have it as a side to your meal, you’ll enjoy it either way.

3. Beet and Potato Salad

My obsession with trying out different cuisines and venturing into different flavors landed me at a middle eastern restaurant. One of the salads that I really enjoyed was a beet and potato with corn salad. Unfortunately, my corn allergy doesn’t allow me to try it, but the waiter serving me was kind enough to offer me the same salad without corn, as the corn was only sprinkled on top of the salad.

I’m glad I gave it a try because the salad was so delicious. I’m delighted and excited to share this recipe with you as it’s super healthy, full of protein, vibrant, colorful, flavorful, and most importantly, delicious.

For this recipe, you’ll need:

1.5 lb steamed or boiled beets,

1lb boiled potato (both diced to your preferred size),

1.5 cups red/black beans,

2 boiled eggs,

½ cup tahini,

1tbsp mustard,

1 lemon juice,

½ lemon slices for decoration,

2tbsp plain yogurt,

2 garlic cloves,

½ tsp salt,

1 tsp mayonnaise,

mint leaves for decoration,

1tbsp parsley,

6–8 lettuce leaves or mixed greens.

In a bowl, add lemon juice, garlic, yogurt, and then gradually add tahini while stirring until all combined. Then add mustard and continue stirring. If the mix is very thick, add just a teaspoon of water; the mix must be thick. Add the beet and potato mixture, then mix in with sauce dressing until all incorporated. Time to decorate your plate! In a large plate, line lettuce leaves or mixed greens, add the beet mixture, sprinkle some red beans and parsley on top. Add mint leaves to the center of the plate. 4. Potato Tuna Pie
