Gluten-Free Savory Cake Recipe

Ingredients
  • 2 ⅛ Cups Gluten free flour
  • 4 Eggs
  • 2 Chicken breasts marinated and sauteed (or smoked Turkey cold cut meat)
  • 1/4 Cup Black olives sliced
  • 1 Medium onion
  • 1 Medium tomato
  • 1 tbsp Parsley
  • 1 tbsp Cilantro
  • 1/2 tsp Black Pepper
  • 1 tsp Salt
  • 1tbsp Olive oil
  • 1/4 cup Avocado oil
  • 3/4 cup Milk
  • 1 tbsp Baking powder
  • 3 tbsp Pickles sliced
  • 1 cup Mozzarrella cheese
  • 4 Laughing cow cheese ((It adds a nice flavor to the mix))
  • 2 tbsp Scallions for sprinkling
Instructions
  1. 1-Preheat oven to 355 degrees Fahrenheit

    2-Cut, chop, and slice all vegetables separately, and set aside

    2-Cut your choice of meat into small pieces

    3-Dice the Laughing Cow cheese into small pieces, set aside

    4-In a saucepan pan over medium heat add olive oil and onions then sauté for about 3 to 4 minutes or until golden brown.

    5-In a bowl with an electric or hand mixer mix in the eggs, salt & pepper, and milk. Add the flour and mix well. Add all the other ingredients except cheeses.

    6-Once all mixed add the diced Laughing Cow cheese.

    7-In a large rectangular 10”x 8”x2” lasagna pan lined with parchment paper and brushed with olive oil pour the mixture, spread the mozzarella cheese on top, and bake in the oven for 25 minutes.

    8-Once cooked, sprinkle it with scallions or parsley (optional).
